Pudding. Something that I haven’t had for a long time. I’ve avoided pudding in general for ages because before now, it only existed to me in little plastic cups and who knows if any of it was actually real chocolate or real vanilla inside those little single serve containers. And plus, I had found myself much tastier sources of dessert pleasure to indulge in, the joys of adulthood I suppose.

As I embarked on Full Blown AIP earlier this year, I found myself without such indulgences however. No chocolate or ice cream to speak of anymore. So I did what any other level headed person would do in this instance. I created my own!

This is a very simple recipe, and one that can be modified a gazillion different ways. You can add more or less Carob depending on preference, and more or less sweetener depending on preference as well. There is just one condition to modification, you have to let me know what you did so I can try it too 😉

What you need:

1 cup Coconut Cream

5 Tbl Carob Powder

1/4 Tsp Maple Syrup (or sweetener of choice)

 

How to:

Make sure your coconut cream is cold, if you want to enjoy this ASAP, which if you don’t, I don’t know what to tell you.

If you want to go by taste, add Carob powder first, adjust if desired, add sweetener if needed.

If you trust me and want to dig in, add it all together, mix it well, eat.
