Cilantro Lime Shrimp
This is hands down one of my favorite ways to prepare shrimp. It’s fresh, full of flavor and pairs well with most any veggie.
What you need:
cooking fat of choice
1 tsp garlic
Veggie noodle (you can use spaghetti squash or any spiralized veggie)
1 lb shrimp
1-2 limes, for juice and zest
bunch of fresh cilantro
S&P to taste
How to:
zest the outside of the lime, then cut in half
heat cooking fat in pan over medium heat, add garlic, cook for 30 seconds
add shrimp to pan, cook until pink
add veggie noodles for about 1 minute
add cilantro and lime juice, toss all together
top with lime zest and S&P
