Egg cups for my sister!
Since I’ve moved home my sister has asked for some help with her eating/nutrition. She has given me ‘total control’ over her meals. This isn’t so easy, as she is still in high school and on a different meal schedule as me. So a lot of things will have to be prepared ahead of time, which is not a new idea. The first thing we decided to change up was breakfast. Her old choices were yogurt and granola, which left her hungry by the time she left the house. Enter egg cups! They came out like mini frittata’s, which is awesome.
Here’s the deal:
preheat the oven to 350, put 6 baking cups in a muffin tin. If you have silicone baking cups, please use them!! I don’t. I didn’t. Mine stuck. I thought I greased the cups enough, but I guess not. That’s the next step, grease the cups.
Decide what veggies to put in (I used mushrooms and spinach), and sauté. Fill the cups a little less than half full, I guess that’s 2/3rds full.
In another bowl, scramble 5 eggs, add a splash of coconut milk, and mix. I added 1/4 tsp of basil, oregano and garlic powder too.
After the veggies are in the cups, add the egg mixture on top, so the cups are almost full. I guess that’s 3/4s full.
Bake for 20-25 minutes, or until a toothpick comes out clean from the center. Eat up!
Well, I survived! I made it through my first CrossFit competition! Go me. And my sister. It was an in-house competition, but we have only been going for a few months, so still slightly intimidating. But as scared/nervous/intimidated as we were, it was actually a blast in the end. The energy felt throughout was awesome. Everyone was cheering for each other regardless of teams and no one really cared about the outcome. Cause really, who actually wanted to do the final workout and totally die?? Not me, no sir, no way. Neither my sisters team or mine won, or even came in close to the top, and that is just fine with me. We came, we saw, we conquered. That is just fine with me.
Now for the workout! It was goooood.
WOD 1: 8 minutes to establish a max of either front squat (dudes) or back squat (chicks).
WOD 2a: 40 total reps, broken up how you want for your team of
Wall balls, t2b/k2e, burpee box jumps/step overs, KB swings.
2b: 10 air squats then 100 m run. Now. The standards said ‘break it up how you want’ so we took advantage of that. He did the air squats, and I ran. Muchhhhh better than doing both.
WOD 3: Strongman carry relay. Both need to carry a stone/med ball, keg, then carry together a sandbag that weighed 100 pounds.
Overall the workout was long and hard. But it was awesome in the end. Nothing was too much, but it was a great challenge. Next one we have I will definitely be doing! And hopefully I will be improving as well.
