Stuffed Mushrooms
Cooked these up right quick for my lil sisters class one afternoon!
What you need:
cooking fat of choice
16-20 Mushroom caps, stems removed.
clove of garlic
half an onion
1/2 tsp salt
1/4 tsp black pepper
4-5 slices bacon (AIP option here!)
EVOO
How to:
preheat oven to 400
wash mushrooms and remove stems
finely chop onion, garlic, bacon and stems
heat cooking fat of choice in pan, when hot add onion and garlic
add S&P and cook for 3-5 minutes
add chopped bacon and mushroom stems and cook for an additional 8-10 minutes
spread mushroom caps with a light coating of EVOO, and fill with the mixture
bake for 15 minutes
