But tasted like crap!
Not everything can be a success, right? I burned my pretty plantains the other day. Those suckers cooked quick! And while one side was a lovely, golden brown, the other was black and charred. Oops. I guess one utter disaster out of several weeks of hits is ok. This used to be the type of thing that would derail me, and make me upset. But now I’ve learned to put it in perspective and know that I will try again. There are more plantains in the world, including the 5 on my counter.
Anyway. I have been making some pretty awesome dinners though, mostly from A Clean Plate. I just love the complex flavors! My favorites so far have been Bacon Alfredo, it calls for chicken, but I like it with shrimp or scallops (see post, Plate Lickin Good). Taco salad with Mexican cauliflower rice and Taco soup (I see a theme here..). The soup is especially yummy! I sub in whatever veggies I want/have and adapted it for the stove top when I don’t have time for my slow cooker. All are Le Boyfriend approved too!
